PASTA LIGORIO

Founded in 1979 in Martina Franca (TA), Pasta Ligorio is one of the artisanal companies that best represents the pasta-making tradition of Apulia. Born from a family passion for fresh pasta, it has transformed generational know-how into a solid entrepreneurial project based on quality, authenticity and a deep connection with its territory.

For over forty years, the company has combined craftsmanship with innovation, selecting 100% Italian durum wheat semolina and applying rigorous production standards. Every stage of the process is carefully monitored to ensure the highest levels of quality and food safety, as demonstrated by its ISO 22000, BRCGS, IFS Food and organic certifications.

Today, Pasta Ligorio exports to several international markets, bringing the authentic taste of Apulian fresh and dry pasta to tables around the world: orecchiette, paccheri, foglie d’ulivo and burnt wheat specialities, symbols of a gastronomic culture that continues to innovate while honouring tradition.

Product lines PASTA LIGORIO

Orecchiette
A symbol of Apulian tradition — small, round and concave, designed to capture every sauce. Perfect with turnip tops, they embody the authentic flavours of Mediterranean cuisine.

Foglie d’ulivo verdi

A pasta shape inspired by olive leaves that blends tradition and nature. Made with 100% Italian durum-wheat semolina and natural spinach, they have a delicate flavour and a rough texture that pairs perfectly with fish, vegetable or cheese-based sauces.

Strozzapreti
A traditional pasta with a rustic and generous look, typical of Emilia-Romagna and Tuscany. Its irregular shape and rough texture make it ideal for holding rich sauces, whether meat- or vegetable-based.

Paccheri

A wide and generous pasta, perfect for holding full-bodied sauces, ragùs, seafood and vegetables. A true symbol of Italian gastronomic tradition that never fails to surprise with its versatility and rich taste.
