The history of Caseificio ELDA dates back to 1917, when Giuseppe Zerbato produced cheese amidst the mountains of Verona and Vicenza. In the 1960s Lino and his wife Elda opened a small artisan dairy, and in 1990 the family made a strategic decision to focus exclusively on ricotta, naming the new company “ELDA”. Today, ELDA stands among Italy’s leading ricotta producers, with a consistent commitment to raw-material selection and process control, supported by certifications including BRC, IFS, V-Label Vegetarian, BIO, ISO 45001 and SMETA II Pillar.
The commitment to sustainability and innovation is reflected in a production process that releases only water vapour and purified water into the environment, thanks to state-of-the-art systems and fresh mountain air used for cooling. Effluent is treated and solids are diverted into biogas systems, while the factory employs Industry 4.0 logic, integrating production, logistics and data systems.
ELDA offers a specialised range that extends beyond ricotta: fresh whey cheese, spreadables, mascarpone, dessert creams based on ricotta, kits for cannoli and IQF/frozen solutions.
